Chicken Chili Bean Salad salads, chili, beans, chicken 1 wilson bwvb02b 1 lb kidney beans -- cooked or 1 canned 1 bunch trimmed scallions -- thinly 1 sliced 1 roasted red pepper -- diced 1 lb grilled chicken breast -- 1 boneless, skinless 2 tablespoon mayonnaise 2 tablespoon chili powder 1 tablespoon ground cumin 1/3 cup low-fat buttermilk 2 tablespoon hot pepper sauce 1 salt and pepper to taste 2 tablespoon flat-leaf parsley -- 1 chopped Toss kidney beans with scallion, roasted red pepper and grilled chicken breast. Mix mayonnaise with chili powder, cumin, buttermilk, hot pepper sauce and salt and pepper to taste. Toss with the bean salad, along with the chopped parsley. Serves 4.
