Veggie (No-Fat) Chili Recipe

chili, beans, low-fat, side dish, vegetarian

2 medium onions, chopped
5 cloves garlic, minced
2 stalks celery, chopped
1 green pepper, chopped
1 red pepper, chopped
2 medium potatoes - peeled and diced
1 (or 2 med sweet potatoes)
5 medium (15oz) cans beans in mild
1 chili gravy (brooks)
1 small can tomato paste (no salt)
1 8 oz can tomato sause (no
1 salt)
1 14.5 can chopped tomatoes
1 pkg frozen corn
3 cup water
1 add:
1/8 teaspoon salt
1/4 teaspoon pepper
1 tablespoon cayenne pepper sauce
1 tablespoon worchestershire sause
2 tablespoon chili powder
1 teaspoon sugar
1/2 teaspoon cumin
1/2 teaspoon crushed red pepper
1 tablespoon parsley (or cilantro)
1/4 teaspoon corriander

Mix well. Bring to a boil over medium-high heat. Reduce heat and simmer for 30-45 minutes or until potatoes are tender. Adjust chili powder, cayenne pepper, crushed red pepper, cayenne pepper sauce to taste. Amounts listed above make medium hot chili.
