Nope, It wasn't the Mexicans who created chilli. Get away from the border area and you'll find few Mexicans who know how to make chilli con carne - either "y frijoles" or "no frijoles". I have a friend who is from the Mexico City area... I hadda teach him how to make a proper bowl of red. Now, he has been teaching his "homies" on trips back home. Lots of interest on "authentic Norteno chilli con carne" in that area. It wasn't the Texans who invented chilli, either. No matter what their propogandists and apologists may say. There really is pretty good evidence that the direct ancestor of chilli as we know it migrated from the West Indies. And that it got there from the Mayan culture in Southern Mexico and Central America (the Mayans not paying any attention to *our* geographical distinctions). The evidence is not, by any means, overwhelming. But, it is solid and pre-dates the San Antonio "Chilli Queans" (in the Old English spelling and sense of quean) who sold chilli as a front for sales of a different kind.
