Corn & Cheese Chili chili, pork, crockpot, beans, corn 1/2 lb bacon 32 oz corn 16 oz light red kidney beans 16 oz dark red kidney beans 28 oz tomatoes, canned 1 onions, chopped 1 bell peppers, chopped 1 tablespoon chili powder 1 teaspoon cumin 1/2 teaspoon salt 1 cup cheese, cheddar, shredded Here's a recipe that has a rather unfortunate title, but which I consider to be a keeper recipe. It's a hearty & tasty dish, easy to make with pantry staples, and very filling. The only problem is, Joseph didn't care for it. Probably because the title calls it chili, and Joseph mainly concurs with Dave Hughes in his views on chili! (Actually, I wouldn't have called this chili, either.) But it's very tasty. It would be a keeper recipe, if only Joseph liked it. I made it to the recipe specifications, not adjusting anything--but to make the recipe even simpler, I don't see why Bacos couldn't be used. This is a recipe even a beginner cook can prepare with ease. I'd like to make it more, but one of the reasons I'm going through my database and making different recipes is because I want to find recipes that will please *everyone* in our household...and give us some variety. Now, if I had a deep - Freezer, I wouldn't mind - Freezing batches of this for "no cook" days...or days when Joseph would be out of town. Too bad my fridge - Freezer is packed. And, here it is! The recipe with the unfortunate title! ;> Cut bacon into 1/2" strips and fry until crisp. Drain. Place the bacon fat in a heavy pot. Drain the corn, light and dark kidney beans, and tomatoes, reserving the liquid. Put the vegetable liquids, onion, and green pepper in the bacon fat, cook until the liquid is reduced by half. Add the corn, beans, tomatoes, chili powder, cumin, and salt. Heat to quite hot. Stir in the grated cheese and cooked bacon and serve. Sylvia's comments: I'm not wild about kidney beans, so I used 1 can kidney beans and 1 can garbanzos. I also used less chili powder and left out the cumin. Great! I plan on getting several meals out of this, so I'm adding crumbled bacon and cheese to each individual dish. Unfortunately, Joseph didn't care for it, so this one will be just for Cimmy and me. I think I'll - Freeze what I made for those times when I don't want to cook. Why couldn't it have been titled something *besides* chili?
