Cool, Creamy Black Bean Soup beans, diabetic, low-fat, soups, vegetables 4 cup black beans (3 15-oz cans, 1 drained and rinsed) 1 1/2 cup plain non-fat yogurt 4 1/2 oz mild peeled green chilies 2 teaspoon cumin 1/2 teaspoon balsamic vinegar or lemon 1 lemon 1 salt and pepper to taste 1 tablespoon snipped chives or sliced 1 green onions Puree all ingredients but chives or onions in blender or food processor. Serve cold, topped with a dollop of yogurt and sprinkled with chives or onions. Serves 4. Per serving: 292 calories, 21g protein, 51g carbohydrates, 16g fiber, 1g fat, 337mg sodium.
