Mustard Vinaigrette

beans, caribbean, chicken, grains

1 teaspoon dry mustard
1/4 cup olive oil
6 cloves garlic; finely minced
1 teaspoon prepared horseradish
or
grated fresh horseradish; to taste
1/4 cup red wine vinegar
1 teaspoon sugar
1 tablespoon minced fresh parsley
1/2 teaspoon coarsely ground black pepper
