Brown Lentil Salad caribbean -- 1 package dried lentils; (12 oz) 1 onion; diced 3 cloves garlic; diced 4 cups water 1 tablespoon dried parsley 1 teaspoon dried oregano 1 teaspoon dried basil 1/4 cup red wine vinegar 1/2 cup oil 1 teaspoon kosher salt In a 2-quart saucepan, combine lentils, onion, garlic, the water, parsley, oregano, and basil. Bring to a boil. Reduce heat to simmer and cook for 25 to 30 minutes. Pour into serving bowl to cool.In a small bowl whisk vinegar, oil, and salt. Pour mixture over lentils and mix well.
