Caribbean Sweet Lime Salsa

1/4 cup sugar
1 tablespoon water
1 cup rose's lime juice
2 small limes, thinly sliced
2 teaspoon caribbean jerk spice
2 teaspoon rice wine vinegar

Put the sugar and water in a small saucepan over a moderate heat.Cook until the sugar caramalises to a light golden brown. Carefully add the lime juice, limes, jerk spice and rice wine vinegar. Cook over a low heat for 15 minutes. Cool and serve at room temperature.

Yield: 1 servings
