Double-Cheese Frittata

cheese, eggs

5 eggs
4 ounces cream cheese
2 cups shredded Cheddar cheese
1/2 cup water
2 green onions; finely chopped

In blender, food processor or mixer, blend eggs with cream cheese; blend in Cheddar, water, onions and 1/4 teaspoon each of salt and pepper. Pour mixture into buttered 8-inch square baking dish; dot with 2 tablespoon unsalted butter. Bake In 375°F oven for 30 to 35 minutes or until slightly puffed and browned. Let stand for 10 minutes before serving. Serve this frittata with vegetables and a salad for lunch or light supper.
