Bacon, Tomato And Cheddar Frittata

vegetables, cheese, eggs, ham

2 slices bacon
4 eggs
1/4 teaspoon dried basil
pinch (each) salt and pepper
1/2 cup shredded Cheddar cheese
1 plum tomato; seeded and chopped
1 green onion; chopped

In large nonstick skillet, cook bacon over medium-high heat for about 5 minutes or until lightly crisped. Transfer to paper towels and let cool; crumble and set aside. Drain off fat in skillet. In bowl, whisk together eggs, basil, salt and pepper; stir in cheese, tomato, onion and bacon. Pour into skillet; cook over medium-low heat, without stirring, for 5 minutes. Cover and cook for 8 to 10 minutes or until set. Cut into wedges to serve.
