Honey Spice Cake With Easy Cream Cheese Icing cakes 1 egg 1 cup sour cream 1 cup honey 1/4 cup butter melted or vegetable oil 2 1/2 cups all-purpose flour 2 teaspoons ginger 1 teaspoon baking powder 1 teaspoon baking soda 1 teaspoon cinnamon 1/2 teaspoon salt 1/4 teaspoon cloves 1/4 teaspoon nutmeg ----Easy Cream Cheese Icing---- 1 cup cream cheese; 8 ounces 1/3 cup honey 1 teaspoon grated orange rind 1/3 cup chopped walnuts; toasted In large bowl, beat egg; blend in sour cream, honey and butter. In separate bowl, combine flour, ginger, baking powder, soda, cinnamon, salt, cloves and nutmeg. Stir into honey mixture. Pour into greased 9-inch square cake pan and bake in 350°F oven for 30 to 40 minutes until tester inserted into centre comes out clean. Let cool on rack; spread with Easy Cream Cheese Icing. Easy Cream Cheese Icing: In bowl, soften cream cheese; blend in honey and rind until smooth. Spread over cooled cake, sprinkle with walnuts. To toast walnuts: Spread on baking sheet and bake in 350°F oven for about 5 minutes or until lightly browned and fragrant.
