Honey Apple Cake

2 1/4 cups sifted soft whole wheat flour
2 teaspoons cinnamon
1 teaspoon baking soda
1 teaspoon baking powder
pinch salt
3 apples
1 cup honey; preferably creamed
3/4 cup unsalted butter; at room temperature
2 eggs
1 teaspoon vanilla
1/2 cup chopped walnuts/brazil/hazelnuts

Butter and flour a 9-inch square cake pan. Sift together flour, cinnamon, baking soda, baking powder and salt. Peel, core and chop apples; there should be about 2 cups. Beat together honey and butter until creamy, about 3 minutes. While still beating, add eggs one at a time. Beat in vanilla Stir flour mixture into honey-butter mixture. Stir in apples and nuts. (Mixture will be thick.) Promptly scoop batter into prepared pan and spread out, keeping it higher at sides than in the centre. Bake in a 350°F oven until cake pulls from sides, about 1 hour. Cool on rack.
