Celebration Apple Cake With Cranberries

8 cups sliced peeled apples; about 8
1 cup dried cranberries or raisins
2 tablespoons cinnamon
1-2/3 cups granulated sugar
4 eggs
1/2 cup vegetable oil
2 cups all-purpose flour
2 teaspoons baking powder
1/2 cup orange juice
----TOPPING----
2 tablespoons cinnamon
2 tablespoons granulated sugar

In bowl, toss together sliced apples, cranberries, cinnamon and 2 tablespoon of the sugar. In large bowl, beat together eggs, remaining sugar and oil for 2 minutes. In separate bowl, sift flour with baking powder; beat into egg mixture alternate ly with orange juice, making 3 additions of flour mixture and 2 of juice. Scrape half of the batter into greased 13- x 9inch (14 cup) cake pan. Sprinkle with apple mixture; top with remaining batter. Topping: Sprinkle cake with cinnamon and sugar. Bake in centre of 350°F oven for 1 hour or until cake springs back when lightly touched. Let cool in pan on rack. TIP : If you like, add 1 cup chopped toasted pecans or walnuts.
