Apple Crumble Cake cakes, desserts, fruits 1 cup all-purpose flour 1/2 cup cornstarch 1/3 cup granulated sugar 1 teaspoon baking powder 3/4 cup butter; softened 1 egg; lightly beaten ----FILLING---- 7 cups sliced peeled apples 2 teaspoons lemon juice 3 tablespoons granulated sugar 1 tablespoon cornstarch 1 teaspoon (each) cinnamon and allspice 3/4 cup raisins ----TOPPING---- 3/4 cup all-purpose flour 1/2 cup granulated sugar 1/4 cup butter 2 teaspoons vanilla In large bowl, mix together flour, cornstarch, sugar and baking powder. With pastry blender or 2 knives, cut in butter until mixture is in small crumbs. Pour egg over top; stir with fork until dough begins to form. Press onto bottom of greased 9-inch spring-form pan; refrigerate for 30 minutes. Filling: In bowl, toss apples with lemon juice. Stir together sugar, cornstarch, cinnamon and allspice; toss with apples to coat. Add raisins and toss to mix. Arrange evenly over base in pan. Topping: In bowl, combine flour with sugar. With pastry blender or 2 knives, cut in butter until mixture is crumbly. Sprinkle with vanilla, mixing in with fork. Bake in centre of 350°F oven for about 1 hour or until golden and apples are tender. Let cool for 15 minutes on rack; remove side of pan. Serve warm or let cool completely.
