Thai Beef Stir-Fry With Snow Peas beef - other, stirfry - beef 2 tablespoons vegetable oil 1 pound stir-fry beef strips 2 cloves garlic; minced 1 tablespoon minced ginger root 4 green onions; chopped 1 sweet red pepper; thinly sliced 1/2 pound snow peas; trimmed ----Sauce---- 1/2 cup beef stock 1/3 cup hoisin sauce 1 tablespoon cornstarch 1 tablespoon sesame oil 1 tablespoon rice vinegar 1 teaspoon dry mustard Sauce: In bowl, whisk together beef stock, hoisin sauce, cornstarch, sesame oil, vinegar and mustard; set aside. In wok or very large skillet, heat half of the oil over high heat; stir- fry beef, in 2 batches if necessary, for 1 to 2 minutes or until browned but still pink inside. Transfer to plate. Reduce heat to medium-high. Add remaining oil to wok; stir-fry garlic, ginger, onions, red pepper and snow peas for about 3 minutes or until tender-crisp. Pour in sauce; cook, stirring, for 2 minutes or until thickened and glossy. Stir in beef and any accumulated juices until well glazed and hot.
