Irish Beef Stew beef - other, stews 1 pound stewing beef 4 carrots; sliced 1 1/2 cups chopped peeled rutabaga 3 onions; sliced 3 stalks celery; sliced 1/4 cup all-purpose flour 2 cups beef stock 2 tablespoons tomato paste 3/4 teaspoon dried marjoram 1 bay leaf 12 small potatoes salt and pepper Cut beef into bite-size cubes, trimming all visible fat. In large oven-proof casserole, combine beef, carrots, rutabaga, onions and celery; sprinkle with flour and stir to mix. Stir in stock, tomato paste and marjoram; add bay leaf. Cover and bake in 325°F oven for 1 hour. Add potatoes; cover and bake for 60 to 75 minutes or until meat and potatoes are tender. Discard bay leaf; season with salt and pepper to taste.
