Honey, Date And Pecan Loaf bbq, beef - other 1 cup chopped dates 1/3 cup butter; softened 1/3 cup packed brown sugar 1/3 cup Dijon liquid honey 2 eggs 2 teaspoons vanilla 2 cups all-purpose flour 2 teaspoons baking powder 2 teaspoons cinnamon 1/2 teaspoon (each) baking soda and salt 1/2 teaspoon ground ginger 1/2 cup milk 1/2 cup chopped toasted pecans In saucepan over medium-high heat, bring dates and 1/2 cup water to boil. Reduce heat, cover and simmer for 5 minutes or until softened. Let cool. In large bowl, beat butter, sugar and honey until fluffy. Beat in eggs, 1 at a time. Stir in date mixture and vanilla. Combine flour, baking powder, cinnamon, baking soda, salt and ginger; stir into date mixture alternately with milk, making 3 additions of dry ingredients and 2 of milk and adding pecans with last addition. Pour into greased 9- x 5-inch (4 cup) loaf pan. Bake in 350°F oven for 1 hour or until tester comes out clean. Let cool in pan on rack for 10 minutes. Transfer to rack; let cool. (Make-ahead: Wrap and store for up to 3 days or - Freeze for up to 1 month.)
