Country Beef Pies pies, beef - other 1/4 cup all-purpose flour 2 pounds stewing beef; cut in 3/4-inch cubes 1/4 cup vegetable oil 1 onion; chopped 1 1/2 teaspoons salt 1/2 teaspoon dried thyme 1/4 teaspoon freshly ground pepper 3 cups water 3 cups cubed potatoes 2 cup vegetables (peas, carrots, turnip) pastry for single crust pies Place flour in sturdy paper bag, add beef, in batches, and shake to coat. In large skillet or saucepan, heat oil; add beef and brown well. Add onion salt, thyme and pepper; cook for 5 minutes or until onion is softened. Stir in 2 cups of the water cover and simmer for 30 minutes. Add potatoes and remaining water; cover and simmer, stirring occasionally, for 30 minutes or until potatoes and meat are tender. Let cool; stir in vegetables. Spoon about 1 cup meat mixture into each of 6 individual dishes. Roll out pastry and cut out 6 pieces large enough to cover top of each dish. Place pastry over meat mixture; press edges to dish to seal. Bake pies in 400°F oven for 45 minutes or until tops are lightly browned.
