Old-Fashioned Meat Loaf beef - ground 1 pound lean beef 1 large onion; finely chopped 1/4 cup natural bran 1 slice whole-wheat bread; crumbled 1/2 teaspoon thyme 1/2 teaspoon salt dash Worcestershire sauce 1 freshly ground pepper; to taste 1 cup tomato juice or tomato sauce 1 egg; lightly beaten 1 teaspoon chopped fresh thyme 1 teaspoon chopped fresh rosemary 1 teaspoon chopped fresh savory 1 teaspoon chopped fresh sage In mixing bowl, combine beef, onion, bran, bread crumbs, thyme, salt, Worcestershire, and pepper to taste. Stir in tomato juice, egg and herbs (if using); mix lightly. Turn into 9-x 5-inch loaf pan or baking dish. Bake in 350 F oven for 45 minutes, or until brown and firm to the touch.
