Meatloaf (2) beef - ground 1 pound ground sirloin 1/2 pound ground veal 1/2 pound ground turkey 1 large onion; finely chopped 1/2 cup finely chopped celery 1/2 cup finely chopped green pepper 1/4 cup finely chopped parsley 1 large clove garlic; finely minced 1 teaspoon ground cumin or cumin seeds 1 tablespoon finely chopped coriander 1/2 teaspoon red pepper flakes dash Worcestershire sauce; optional dash ketchup; optional 1/2 cup fresh breadcrumbs 1 large egg; lightly beaten Preheat oven to 350°F. In a large mixing bowl, combine ground sirloin, veal and turkey with onion, celery, green pepper, parsley, garlic, cumin, coriander, pepper flakes and Worcestershire and ketchup, if using. (The easiest way to mix this is with your hands.) Gently stir in breadcrumbs and then add beaten egg. Place in a meatloaf pan (a 9- x 5-inch loaf pan fitted with a rack for draining fat) or shape mixture into an oblong loaf shape and place on top of a grilling pan with holes. Bake 1 hour. November, 98: Has raw vegetable taste - try chopping vegetables more coarsely and sweating in sauté pan and cooling before adding to meat mixture. Could use more flavour.
