Hamburger And Noodle Skillet Supper

beef - ground

3 cups uncooked egg noodles; or
1 cup small pasta; about 1/4 pound
1 pound ground beef
1 onion; chopped
1 small zucchini; cut in thin 2-inch strips
1 each sweet green or red pepper; cubed
1 1/2 cups sliced mushrooms; about 1/4 pound
4 tomatoes; cubed; or
1 can (14 oz) tomato sauce.
1/2 cup tomato sauce
1/4 cup chopped fresh parsley
1 teaspoon dried basil
1/2 teaspoon dried oregano
salt and pepper; to taste

In large pot of boiling water, cook pasta until al dente (tender but firm); drain. Meanwhile, in large skillet or Dutch oven, cook beef over medium heat until browned, about 5 minutes; pour off all fat. Add onion; cook until tender, about 4 minutes. Add zucchini, pepper and mushrooms; cook, stirring, over medium high heat for about 5 minutes or until tender-crisp. Add tomatoes, tomato sauce, parsley, basil and oregano; simmer for 5 minutes. Stir in noodles. Season with salt and pepper to taste.
