Apple And Sweet Potato Beef Curry

curry, beef - ground

1 tablespoon vegetable oil
2 cloves garlic; minced
1 onion; finely chopped
1 cup cubed peeled sweet potato
1 pound lean ground beef
1 tablespoon curry powder
1 tablespoon ground cumin
1/2 teaspoon cinnamon
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon hot pepper flakes
1 can (28 oz) tomatoes; chopped
1 tablespoon liquid honey
2 apples; peeled and diced
1/4 cup fresh coriander

In large nonstick skillet, heat oil over medium heat; cook garlic, onion, sweet potato and 2 tablespoons water, stirring occasionally, for about 5 minutes or until softened. Add beef, breaking up with back of spoon; cook for about 5 minutes or until no longer pink. Add curry powder, cumin, cinnamon, salt, pepper and hot pepper flakes; cook, stirring, for 2 minutes. Add tomatoes and juices and honey; simmer, uncovered and stirring occasionally, for 15 minutes. Add apples; cook for about 10 minutes or until tender and curry is thickened. Serve garnished with coriander.
