Oven Barbecued Lemonade Ribs

4 pounds pork side ribs
2 strips lemon peel
1 onion; quartered
salt and pepper
3/4 cup frozen lemonade concentrate; thawed
1/4 cup honey
1 tablespoon grated lemon rind
1/2 teaspoon dried thyme

For this tangy dish, use meaty side ribs or sweet-and-sour-size ribs, which are cut into serving-size pieces. In large saucepan, combine ribs, lemon peel, onion, and salt and pepper to taste; cover with cold water. Bring to boil; reduce heat and simmer for about 45 minutes or until ribs are fork-tender. Remove from water; let stand for 10 minutes. Meanwhile, in small bowl, whisk lemonade concentrate, honey, lemon rind and thyme. Using slotted spoon, transfer ribs to large plastic bag; pour in lemonade mixture. Force out all air and secure tightly. Marinate ribs in refrigerator for at least 2 hours or up to 8 hours, turning bag often. With tongs, transfer ribs to foil lined roasting pan. Bake in 400°F oven for 30 to 35 minutes, basting often with marinade and turning once, until glistening and golden brown. Season with salt and pepper to taste.
