Maple-Glazed Ribs bbq, pork 3 pounds pork back ribs 3/4 cup maple syrup 2 tablespoons ketchup 2 tablespoons brown sugar 1 tablespoon cider vinegar 1 tablespoon Worcestershire sauce 1/2 teaspoon salt 1/2 teaspoon dry mustard The mellow flavor of maple is an ideal enhancement for meaty back ribs. These may be cooked completely in the oven or grilled for the last few minutes on the barbecue. Cut ribs into serving-size pieces. Place in roasting pan. Roast in 425 F oven for 30 minutes. In small saucepan, combine remaining ingredients and bring to boil. Pour over ribs and bake, uncovered, in 325 F oven for about 1 hour or until tender, basting and turning ribs occasionally during cooking. Alternatively, ribs may be finished on the barbecue: remove from oven after cooking in sauce for about 40 minutes; place on barbecue grill about 6 inches above medium-hot coals. Grill for about 20 minutes, turning occasional and brushing with sauce, until tender and glazed.
