Grilled Pork On Skewers (Souvlaki) bbq, pork, greek 1 1/2 pounds pork shoulder; trimmed 1 clove garlic; minced 1/4 teaspoon (each) salt and pepper 1/4 cup olive oil 1/4 cup dry red wine or lemon juice 1 tablespoon dried oregano If using wooden skewers, soak them in warm water for 30 minutes to prevent scorching. Cut pork into 1-1/2-inch cubes. In bowl, toss pork with garlic, salt and pepper. Cover and refrigerate for at least 1 hour or up to 24 hours. In bowl, whisk together oil, wine and oregano. Thread 2 or 3 pieces of meat onto each skewer; cook on greased grill over medium-hot coals or on medium setting, turning once and basting frequently with oil mixture, for 20 to 25 minutes or until browned and no longer pink inside.
