Chicken Club Pita

bbq, chicken - breast

1 pound boneless skinless chicken breasts
4 slices prosciutto ham; 6 ounces, or
4 slices bacon
2 tablespoons Dijon mustard
2 tablespoons liquid honey
2 teaspoons cider vinegar
1 teaspoon vegetable oil
1/4 teaspoon pepper
4 pita breads
1/4 cup light mayonnaise
1 tomato; chopped
1 cup shredded lettuce

Cut chicken into 1 1/2-inch chunks. Cut prosciutto into 1 1/-inch wide strips. Thread onto skewers, weaving ham around and alternating with chicken. In small bowl, whisk together mustard, honey, vinegar, oil and pepper. Place skewers on greased grill over medium-high heat; close lid and cook, brushing with mustard mixture and turning occasionally, for 15 minutes or until chicken is no longer pink inside. Meanwhile, wrap pitas in foil; heat on grill for 5 minutes. Spread pitas with mayonnaise. Removing skewers, divide chicken and ham over pitas. Top with tomato and lettuce; fold in half.
