There are endless versions of Prince of Wales, King Edward, Queen Elizabeth, Queen Victoria and Prince Albert cakes, and the names are often interchangeable. Some are made with rolled oats or molasses, and the frostings vary, but in general these cakes are dark, moist, spicy and fruited with raisins or dates. This particular version is served at the Prince of Wales Teahouse on the Prince of Wales Ranch in southern Alberta.
