Crumb Cake

1 1/2 cups packed brown sugar
1 1/2 cups all-purpose flour
2 teaspoons cinnamon
1 teaspoon nutmeg
1/2 teaspoon cloves
1/2 teaspoon salt
1/2 cup butter
1 teaspoon baking powder
1/2 teaspoon baking soda
1 egg; beaten
2/3 cup buttermilk
1 cup raisins

Crumb Cake is comfort food at its best. There are many different versions but they're all based on a crumb mixture made by cutting butter into dry ingredients first, and reserving some of the crumbs for topping the spicy batter. The results are very tasty and satisfying, especially when served warm. Combine brown sugar, flour, cinnamon, nutmeg, cloves and salt. With pastry blender or 2 knives, cut in butter until mixture resembles fine crumbs- set aside 3/4 cup. To remaining crumbs, add baking powder and baking soda. Stir in beaten egg, buttermilk and raisins. Pour batter into greased 8-inch square baking pan and top with reserved crumbs. Bake in 350 F oven for 40 minutes, or until tester inserted in centre comes out clean.
