Shrimp Packets appetizers, shellfish, shrimp 1 cup water 1/4 cup lemon juice 1 pound small shrimp; peeled and deveined 10 green onions 1/2 pound tofu 1 tablespoon oyster sauce 1 teaspoon sesame oil 1 teaspoon finely chopped fresh gingerroot 2 green onions; finely chopped salt and freshly ground pepper 2 heads Boston lettuce; separated In saucepan, bring water and 2 tablespoons of the lemon juice to boil. Add shrimp and reduce heat; simmer for 3 minutes or until shrimp are pink and curled. Remove from heat and let cool. Drain shrimp; chop finely and reserve in bowl. Cut long green strands from green onions (you should have 30). Reserve white parts for another use. Drop strands into saucepan of boiling water for 15 seconds; drain and refresh under cold running water. Drain and set aside for ties. In food processor or blender, purée tofu, remaining lemon juice, oyster sauce and sesame oil; add to shrimp and mix well. Fold in gingerroot and chopped green onions, season with salt and pepper to taste. Spoon about 1 tablespoon of the shrimp mixture onto each lettuce leaf. Fold sides of leaf over filling and roll up from bottom.
