Pita Pizza Thins appetizers, pizza 12 mini-pita breads 2 cups low-calorie tomato sauce; 1 recipe 1/2 cup shredded low-fat mozzarella cheese 1/4 cup freshly grated Parmesan cheese ----Low-Calorie Tomato Sauce---- 1 can (28 oz) plum tomatoes 1 onion; finely chopped 2 cloves garlic; minced 2 teaspoons dried basil 1 teaspoon dried oregano 1 bay leaf salt and freshly ground pepper Separate pitas into halves. ( If crispy pitas are preferred, arrange halves on baking sheet and bake in 375°F oven for 3 to 4 minutes or until crisp.) Spread each pita round with tomato sauce; set aside. In bowl, mix together mozzarella and Parmesan cheeses; sprinkle over each round. Place on baking sheets and bake in 375°F oven for 5 minutes or until cheese has melted Low-Calorie Tomato Sauce: Drain tomatoes, reserving juice. In food processor or blender, purée tomatoes; set aside. In saucepan, bring reserved tomato juice to boil. Add onion and garlic; reduce heat and simmer until onion has softened. Stir in pureed tomatoes, basil, oregano, bay leaf and salt and pepper to taste. Simmer gently for 1 hour or until sauce has thickened.
