Grilled Satay With Peanut Sauce appetizers, beef - other 1 pound sirloin steak; 1-1/2 inches thick 1 tablespoon vegetable oil 1 tablespoon soy sauce 1/2 teaspoon grated lemon rind 1 tablespoon lemon juice 1 teaspoon packed brown sugar 1 clove garlic; minced 1 teaspoon chopped ginger root 1/8 teaspoon hot pepper sauce; or to taste 1/8 teaspoon five-spice powder; or to taste ----Simple Peanut Sauce---- 1/4 cup peanut butter 2 tablespoons water 1 tablespoon soy sauce 1 tablespoon lemon juice 1/2 teaspoon granulated sugar 1/2 teaspoon anchovy paste 1/8 teaspoon hot pepper sauce; or to taste 1 green onion; finely chopped Trim fat from steak. Cut across the grain into 1/4-inch thick strips; cut into 3-inch lengths. In large bowl, whisk together oil, soy sauce, lemon rind and juice, sugar, garlic, ginger, hot pepper sauce, and five-spice powder. Add beef, stirring to coat well. Cover and marinate in refrigerator for at least 4 hours or for up to 8 hours, stirring occasionally. Reserving marinade, thread 2 pieces of beef onto each of 12 soaked wooden skewers. Place on greased grill over medium-high heat; close lid and cook, turning once and brushing with marinade, for about 4 minutes or until beef is browned yet still pink inside. Serve with Simple Peanut Sauce. Simple Peanut Sauce: In bowl, whisk peanut butter with water; whisk in soy sauce, lemon juice, sugar, anchovy paste, hot pepper sauce and green onion. (Sauce can be set aside at room temperature or up to 4 hours.)
