Asparagus Quiche

vegetables, cheese, eggs

1 9-inch pie shell; unbaked
12 ounces asparagus
1 cup shredded old white Cheddar; or
1 cup shredded Asiago cheese
4 eggs
1/2 cup milk

Prick pie shell all over. Bake in centre of 425şF oven for about 8 minutes or until lightly browned. Remove from oven. Reduce heat to 350şF. Trim and chop asparagus; sprinkle evenly in pie shell. Sprinkle with cheese. in bowl, whisk together eggs, milk, 1/4 teaspoon salt and pinch pepper; gently pour over asparagus mixture. Bake for about 45 minutes or until tip of knife inserted in centre comes out clean.
