Peanutty Pork And Vegetable Stir-Fry pork, stirfry - pork 12 ounces boneless pork loin chops 1-1/2 teaspoon vegetable oil 1 onion; chopped 2 cloves garlic; minced 2 teaspoon minced gingerroot; or 1/2 teaspoon ground ginger 1 pkg (1 lb) frozen Japanese-style vegetables ----PEANUT SAUCE---- 1/4 cup peanut butter 3 tablespoons hot water 4 teaspoons (each) cider vinegar and soy sauce 1 teaspoon packed brown sugar 1 teaspoon sesame oil pinch salt Peanut Sauce: Whisk together peanut butter, water, vinegar, soy sauce, sugar, sesame oil and salt; set aside. Trim fat from pork. Slice thinly into strips. In wok, heat oil over high heat; cook pork, stirring, for 3 minutes or until no longer pink. Add to sauce. Add onion, garlic and ginger to wok; cook for 1 minute. Add vegetables; cover and cook, stirring once, for 5 minutes or until vegetables are hot. Return pork to wok along with peanut sauce cook, stirring, for 2 minutes or until steaming.
