Orange Cookies With Chocolate cookies, chocolate 1 cup unsalted butter 1 cup granulated sugar 1 egg yolk 1 teaspoon pure vanilla extract 1 teaspoon finely chopped orange rind 2 cups all-purpose flour 1/4 cup candied orange peel; finely chopped ----Garnish---- 4 ounces bittersweet or semisweet chocolate In mixing bowl, cream butter until light and fluffy; gradually add sugar and beat well. Blend in egg yolk and beat well. Beat in vanilla and rind and mix thoroughly. Combine flour and candied peel; blend into batter. Refrigerate for 30 minutes. Form dough into 1 inch balls and place on buttered or parchment-lined baking sheets. Press cookies flat with bottom of glass dipped in flour. Bake in 350ºF oven for 12 to 15 minutes. Let cool on wire racks. When cookies are completely cooled, arrange in single layer on sheets of waxed paper. In top of double boiler or in microwave, carefully melt chocolate. Drizzle over cookies. Or spread bottom of each cookie with chocolate and let dry upside down. Let stand before storing.
