Snapper With Garlic Mayonnaise fish 1 whole red snapper; about 2 pounds salt 1 lemon; cut in wedges vegetable oil 2/3 cup mayonnaise 1 teaspoon pepper 1 teaspoon lemon juice 2 cloves garlic; chopped Rinse fish under cold running water, pat dry. Place on large greased piece of foil. Sprinkle inside cavity with salt; place lemon wedges inside. Brush outside of fish with oil. In bowl, combine mayonnaise, pepper, lemon juice and garlic; spread over outside of fish. Place another large piece of greased foil over fish and fold edges together to seal in fish. Grill fish 4 inches from heat for 10 minutes per inch of thickness or until fish flakes easily when knife tip is inserted at back bone.
