Christmas Frittata eggs, christmas, breakfast 9 eggs 1 cup milk 1/2 teaspoon (each) nutmeg and oregano 1/4 teaspoon (each) salt and pepper 1 3/4 cups shredded Cheddar cheese; or shredded Monterey Jack cheese 1/4 pound cream cheese 2 teaspoons vegetable oil 1 onion; chopped 1/2 cup diced sweet red pepper; optional 4 cloves garlic; minced 1 pkg (10 oz) spinach; cooked, drained, chopped 9 cherry tomatoes; halved sweet red and yellow pepper red onion slices In large bowl, whisk together eggs, milk, nutmeg, oregano, salt and pepper; stir in Cheddar and cream cheese. In small skillet, heat oil over medium-high heat; cook onion, diced red pepper ( if using ) and garlic for 3 minutes or until softened. Stir in egg mixture along with spinach. (Recipe can be prepared to this point, covered and refrigerated overnight.) Pour into greased 6 cup tree mould or 8 inch square baking dish or 11x7 inch baking dish. Bake in 350şF oven for 40 to 50 minutes or until puffy, golden brown around edges and set in center. Decorate with cherry tomatoes, sweet pepper cutouts and red onion garland. Tip: When fresh spinach is not available, use a 300 gram package of frozen spinach, thawed and drained. discard the coarsest stems before chopping.
