Canadian Baked Beans

4 cups dried white beans
1 can (14 oz) tomatoes
1 cup pure maple syrup
2 teaspoons cider vinegar
2 teaspoons dry mustard
2 teaspoons salt
1/2 teaspoon ginger
1 bay leaf; crumbled
2 apples
3/4 pound back bacon; or
smoked farmers' sausage
1 small onion; studded with
4 cloves

Sort beans, discarding blemished ones, and place them in large saucepan. Add enough water to cover beans by about 2 inches; bring to boil, cover and cook for 2 minutes. Remove from heat and let stand, covered, for 1 hour. Pour in enough additional water to cover beans by about 2 inches; bring to boil, reduce heat and simmer for 45 minutes or until beans are slightly soft. Drain, reserving bean liquid. Transfer beans to bean pot or deep casserole with lid; stir in tomatoes, maple syrup, vinegar, mustard, salt, ginger and bay leaf. Core and chop apples. Cut bacon or sausage into bite-sized pieces. Stir apples and bacon into beans. Push onion down into center of mixture. Add just enough reserved bean liquid to cover beans (add boiling water if there is not enough). Cover and bake in 250şF oven for 5 to 6 hours, adding boiling water occasionally to maintain liquid level. Stir beans occasionally from bottom of pot to top so they cook evenly. Remove lid during last hour of cooking. Remove onion before serving. Food Exchanges: 0 Grain(Starch); 0 Lean Meat; 1/2 Vegetable; 1/2 Fruit; 0 Fat; 0 Other Carbohydrates
