Baked Summer-Fruit Compote

3 peaches
3 apricots
3 plums
1/4 cup granulated sugar
12 strawberries or cherries
1/2 cup blueberries

Remove pits from peaches, apricots and plums; cut fruit into large chunks and place in 8 inch square baking dish. Sprinkle sugar over top. Bake in 350ºF oven for 20 minutes. Stir in strawberries and blueberries; cook for about 10 minutes or until fruit is tender. Stir gently. Let cool to room temperature. Makes 4 to 6 servings. Food Exchanges: 0 Grain(Starch); 0 Lean Meat; 0 Vegetable; 1 1/2 Fruit; 0 Fat; 1 Other Carbohydrates
