Asian Meat Loaf Muffins

beef - ground

1 egg
3 green onions; chopped
1 clove garlic; minced
1/3 cup dry bread crumbs
2 tablespoons hoisin sauce
1 tablespoon minced gingerroot; or
1/2 teaspoon ground
1 tablespoon soy sauce
1 tablespoon Dijon mustard
1/4 teaspoon salt
1 pound lean ground beef
----GLAZE----
1 1/2 teaspoons hoisin sauce
1 1/2 teaspoons soy sauce

In large bowl, beat egg lightly; add onions, garlic, bread crumbs, hoisin sauce, ginger, soy sauce, mustard and salt. Mix in beef. Divide into 8 portions; lightly press each into ungreased muffin cup. Glaze: In small bowl, whisk together hoisin and soy sauces; brush over muffins. Bake in 400şF oven for 20 to 25 minutes or until no longer pink inside. Drain off fat. Remove from pan. Food Exchanges: 1/2 Grain(Starch); 3 Lean Meat; 1/2 Vegetable; 0 Fruit; 3 Fat; 1/2 Other Carbohydrates
