Cocoa Fruit Bars

cookies

1/4 cup butter; softened
1 cup packed brown sugar
1 egg
1-1/2 teaspoon vanilla
1 cup unsweetened applesauce
1/2 cup (each) all-purpose and whole wheat flour
1/2 cup unsweetened cocoa powder; sifted
1/2 cup quick-cooking rolled oats
1/2 cup chopped dried fruit
1/3 cup chocolate chips
1/4 teaspoon salt

In bowl, beat butter with brown sugar. Mix in egg and vanilla. Stir in applesauce. Add all-purpose and whole wheat flours, cocoa, oats, dried fruit, chocolate chips and salt; stir until combined. Spread in lightly greased 8-inch square baking pan. Bake in centre of 375°F oven for 35 minutes or until tester inserted in centre comes out clean. Let cool in pan on rack. Cut into bars. (Can be individually wrapped in plastic wrap and stored at room temperature for up to 3 days or frozen, for up to 2 weeks.)
