Caramelized Pears With Tiramisu Cream desserts, fruits 4 large ripe pears; Bartlett or Bosc 3/4 cup granulated sugar 1/4 cup chopped candied ginger 1 lemon; thinly sliced ----FILLING---- 1/2 cup ricotta cheese 2 tablespoons granulated sugar 1 tablespoon dark rum or coffee liqueur 1/2 teaspoon vanilla 2 tablespoons chopped semisweet chocolate ----GARNISH---- 2 tablespoons icing sugar; sifted 8 large sprigs fresh mint gold dust; optional Cut pears in half lengthwise; scoop out cores. Set aside. Sprinkle sugar over skillet large enough to hold pears in single layer as much as possible. Cook over medium-high heat for about 5 minutes or until melting and beginning to brown. Add pears, cut side down; sprinkle with ginger. Arrange lemon slices over top. Cook over medium-high heat for about 2 minutes or until sugar browns, being careful not to burn sugar. Reduce heat to medium-low; cook gently for 10 minutes. Remove from heat; cover and let stand for 30 minutes. (Pears will continue to cook.) FILLING: Meanwhile, in bowl, beat together cheese, sugar, rum and vanilla. Strain chopped chocolate to remove any chocolate dust; stir bits into filling. GARNISH: Place pear half, cut side up, on each plate. Spoon cheese mixture onto each. Drizzle any cooking syrup over pear and plate. Top with lemon slice; dust with icing sugar. Garnish with mint sprig, and gold dust (if using). TIP: For best results, buy firm pears and let them ripen. A melon bailer works very well to scoop out the cores.
