Chicken A La King

chicken - breast

1/4 cup butter
1/4 cup all-purpose flour
2 cups light cream
1 cup chicken stock
1 egg yolk
3 cup cubed cooked chicken
2 tablespoons butter
2 cups sliced mushrooms
1 teaspoon salt
1/4 teaspoon freshly ground pepper
1 teaspoon lemon juice
1 cup frozen green peas
2 tablespoons chopped pimiento
6 cups cooked noodles

In saucepan, melt 1/4 cup butter; stir in flour and cook over medium heat for 1 minute. Pour in cream and chicken stock; whisk until thickened and smooth, about 2 minutes. In small bowl, lightly beat egg yolk; stir in some of the hot liquid. Pour egg mixture back into saucepan. Add chicken and simmer for 5 minutes. Meanwhile, in skillet, melt 2 tablespoons butter and sauté mushrooms; stir into chicken mixture. Add salt, pepper and lemon juice; taste and adjust seasoning. Let cool; stir in peas and pimiento. Serve over cooked noodles.
