Zucchini Rice Pilaf

vegetables, rice

2 teaspoons vegetable oil
1 onion; chopped
1 cup long grain rice
2 cups vegetable stock or water
2 cups grated zucchini

In heavy saucepan, heat oil over medium-high heat; cook onion, stirring occasionally, for about 3 minutes or until softened. Add rice; cook, stirring, for 1 minute. Add stock or water; bring to boil. Reduce heat to low; cover and simmer for 20 minutes. With fork, stir in 2 cups zucchini; cook, covered, for 5 minutes or until zucchini and rice are tender and liquid is absorbed.
