Sourdough Cinnamon Rolls

----DOUGH-----
1 cup active sourdough starter
2 teaspoons salt
2 tablespoons shortening
2 1/2 cups unbleached flour
1/2 cup dry skim milk
3 tablespoons sugar
1/2 cup whole milk
1 1/2 teaspoons baking soda
----FILLING-----
butter
3/4 cup brown sugar
2 teaspoons cinnamon
----TOPPING-----
2 tablespoons melted butter
1 tablespoon liquid coffee
2 tablespoons brown sugar
1/2 teaspoon cinnamon
dash salt.

Dough: Mix ingredients together, working in the flour until a good dough results. Divide the dough into two parts, rolling each out into thin rectangle about 1/4 inch thick. Filling: Dot each half with butter. Mix brown sugar and cinnamon; sprinkle over dough. Roll dough into foot long rolls. Mix topping ingredients and spread over bottom of pan. Cut off 1-inch slices of dough and place in pan. Let dough rise about an hour; bake at 325ºF. Serve with sticky side up.

Yield: 8 servings
