Onion and Artichoke Focaccia

breads

2 tablespoons olive oil
5 medium onions; thinly sliced
1/2 teaspoon dried thyme
1/2 teaspoon salt
1/4 teaspoon pepper
1 jar (6 oz) marinated artichoke hearts; drained and chopped
1/4 cup black olives; coarsely chopped
1 14 ounce pizza shell; baked
1/3 cup mozzarella cheese; shredded
2 tablespoons Parmesan cheese; grated

In large skillet, heat oil over medium heat; cook onions, thyme, salt and pepper, stirring often, for 20 minutes or until very soft and caramelized. Remove from heat. Stir in artichokes and olives. Place pizza shell on baking sheet; spread with onion mixture, Sprinkle with mozzarella and Parmesan cheeses. Bake in 375 F oven for 12 to 15 minutes or until cheese is bubbly.
