Major Greys Chicken Stir-Fry

chicken - breast, stirfry - chicken

3/4 pound skinless boneless chicken breasts; cut into thin strips
1/4 cup soy sauce
2 medium onions
3 medium red or yellow bell peppers
3 tablespoons vegetable oil; divided
1/4 cup mango chutney
salt and pepper

Put chicken and soy sauce in small bowl; stir to coat well. Set aside. Slice onions and peppers. In wok or large heavy frypan, heat 1 tablespoon oil over medium-high heat. Add onions and stir-fry for 3 to 4 minutes or until golden. Remove from wok and set aside. Add I tablespoon oil to wok, Add peppers and stir-fry for about 3 minutes or until tender-crisp. Remove from wok and set aside. Increase heat to high and add remaining 1 tablespoon oil to wok. Using slotted spoon, remove chicken from soy sauce; reserve soy sauce. Add chicken to wok and stir-fry, in 2 batches, for 2 minutes or until no longer pink inside. Return onions, peppers and chicken to wok. Add chutney and remaining soy sauce; simmer for 2 minutes, stirring frequently. Add salt and pepper to taste. Serve it on a bed of couscous.
