Cod With Wine And Sun-Dried Tomatoes

1 pound cod fillets; cut into four pieces
1 tablespoon vegetable oil
2 cloves garlic; chopped fine
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 teaspoon dried thyme
1/3 cup dry white wine
6 sun-dried tomatoes (packed in oil); cut into thin slices
1 small lemon; sliced thin

Brush cod fillets with oil and sprinkle with garlic. Sprinkle with salt, pepper and thyme. Place fillets in 11- x 7-inch baking dish and add wine. Top with sun-dried tomatoes and lemon slices. Cover with foil and bake at 375şF for 20 minutes or until fish flakes easily when tested with a fork. Add pasta (spinach fettuccine would add a welcome patch of green to the plate) and a side dish of steamed or microwaved butternut squash.

Yield: 4 servings
