Mac And Cheese pasta, cheese 3 cups macaroni 2 tablespoons butter or margarine 1 onion; chopped 3 tablespoons all purpose flour 1 teaspoon dry mustard pinch cayenne pepper 2 1/4 cups milk 1 cup shredded skim-milk cheese 1 cup shredded fat-reduced old Cheddar 1 cup low-fat cottage cheese salt and pepper ----TOPPING---- 1/2 cup fine fresh bread crumbs 2 tablespoons freshly grated Parmesan cheese 1 tablespoon butter; melted In large pot of boiling salted water, cook macaroni for 8 to 10 minutes or until tender but firm; drain and return to pot. Meanwhile, in saucepan, melt butter over medium heat; cook onion for 3 to 5 minutes or until softened. Stir in flour, mustard and cayenne. Gradually whisk in milk and bring to boil, whisking constantly until slightly thickened. Remove from heat; stir in skim- milk cheese and Cheddar cheese until melted. Stir in cottage cheese. Season with salt and pepper to taste. Pour over macaroni; stir. Transfer to 13- x 9-inch baking dish. Topping: Combine bread crumbs, Parmesan cheese and butter; sprinkle over macaroni.
