Spicy Broiled Cod fish 1 tablespoon ground cumin 1 1/2 teaspoons chili powder 1/2 teaspoon cayenne pepper 1 teaspoon finely chopped garlic 1 pound cod fillets; cut into four pieces olive oil lime slices Combine cumin, chili powder, cayenne pepper and garlic. Brush cod fillets lightly with oil. Sprinkle both sides of fillets with spice mixture. Place on greased broiler pan and broil for about 10 minutes per inch of thickness or until fish flakes easily when tested with a fork. Transfer fillets to serving platter and garnish with lime slices. Add steamed broccoli, some rice or pasta. How to Roast Cumin: You can buy ground cumin by the jar, but the spice will pack more of a flavor punch if you buy the seeds, roast them and grind them yourself. A raw cumin seed is a bundle of trapped possibilities. If you really want to smell and taste the spice, you have to heat it before you add it to other food. To roast, use a heavy frypan over medium-high heat. Add whole seeds and roast for one to two minutes, shaking the pan frequently. The seeds should darken, but if they're black, they're burned. Use a mortar and pestle (or a clean coffee grinder) to grind them.
