Smoked Salmon Pizza pizza, salmon 2 12-inch unbaked pizza crusts; OR 2 12-inch Italian-style bread shells 1 small red onion 2/3 cup light spreadable cream cheese 6 ounces sliced smoked salmon; cut into bite-size pieces 2 tablespoons drained capers 1/2 lemon pepper small pieces fresh dill Using a fork, prick unbaked pizza crusts all over. Bake at 500 F for 8 minutes, then slide crusts from pans directly on to oven rack; bake an additional 1 to 2 minutes or until bottoms of crusts are crisp and golden. (For bread shells, bake according to package instructions.) Cut onion in half lengthwise, then cut each half crosswise into thin slices. For each pizza, spread half the cream cheese evenly over hot baked pizza crust or bread shell, then quickly top with half the smoked salmon. Sprinkle with half the onion and capers. Squeeze a little lemon juice over pizza and sprinkle with pepper. Garnish with dill. Serve immediately. Add a wild greens salad and you have a satisfying light meal.
